Blueberry-Lavender Honey Popsicles Recipe

On a hot summer day, nothing beats a popsicle. These blueberry-lavender honey popsicles are easy to make and perfect for any gathering. They’re creamy, tangy, and full of delicious flavors like Greek yogurt, honey, blueberries, lemon curd, and lavender.

Ingredients:

  • 1 teaspoon dried culinary lavender
  • ¾ cup fresh blueberries
  • 1 ¾ cups plain Greek yogurt
  • ¼ cup honey, divided
  • â…› teaspoon kosher salt, divided
  • 1 teaspoon lemon juice
  • ¼ cup lemon curd

Optional:

  • ¼ cup melted white chocolate
  • Dried lavender for decoration

Steps:

  1. Grind the lavender: Use a spice grinder or food processor to grind the lavender. Set it aside.
  2. Puree the blueberries: In the same grinder or processor, puree the blueberries. Set them aside.
  3. Prepare yogurt mixtures: Divide the yogurt between two bowls. Stir half of the honey and salt into each bowl.
  4. Mix blueberry-lavender yogurt: Add the ground lavender, blueberry puree, and lemon juice to one bowl of yogurt. Stir to combine.
  5. Transfer to bags: Put each yogurt mixture and the lemon curd into separate piping or sandwich bags.
  6. Layer the popsicles: Pipe layers of plain yogurt, blueberry yogurt, and lemon curd into popsicle molds.
  7. Fill molds: Repeat the layers until all mixtures are used up.
  8. Reduce air bubbles: Tap the molds lightly on the countertop to reduce air bubbles. Add tops or popsicle sticks, and cover.
  9. Freeze: Freeze for at least 4 hours or until firm.
  10. Unmold: Dip the molds in hot water to release the popsicles.
  11. Garnish: Drizzle with melted white chocolate and sprinkle with lavender if desired.
  12. Serve: Serve immediately or keep frozen until ready to serve.

Tips:

  • No popsicle molds? Use ice cube trays, muffin tins, cups, or yogurt containers.
  • Make popsicles creamy: Use rich dairy products like Greek yogurt or plant-based options like coconut milk. Honey helps prevent large ice crystals, making the popsicles smoother. Blend ingredients well, and consider adding a splash of alcohol for an even creamier texture.
