I am a foodie, and I believe that food brings excitement, color, and flavor to life. One dish that truly exemplifies this is Anday ka Khagina, a famous Hyderabadi dish. Its popularity soared thanks to Chef Shireen Anwer featuring it on her television cooking show. Recently, I decided to try out the viral version recommended by Aditi Rao Hydari, and it was an absolute delight.

Ingredients:

  • 2 eggs
  • 3 medium onions, thinly sliced
  • 2 garlics , 1 chopped and other roughly crushed in mortar-pestle with 2 dry chillies or chillie flakes
  • 2 green chilies
  • 2 tablespoons chopped coriander (optional)
  • 3 tablespoons oil
  • 1/2 teaspoon red chili powder (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper & salt

Method:

  1. Prep and Fry: Fry the thinly sliced onions, chopped green chilly and sliced garlic in oil until golden.
  2. Make the Gravy: Add salt, red chili powder (optional). Mix well until the gravy is ready.
  3. Add Eggs: Add 2 e eggs in a separate bowl, then add them to the bed of onion and garlic. Add Ellipaya Karam (crushed garlic, red chilly and salt)
  4. Finish: Lower the flame, add black pepper and salt (my addition)
  5. Serve: Enjoy with chapati or paratha or toast (as I did).
