Revitalizing a Classic: Matcha Strawberry Tiramisu

Tiramisu has long been a beloved staple on dessert menus, known for its rich flavors and creamy textures. To refresh this classic, try the vibrant Matcha Strawberry Tiramisu, a perfect treat for warm weather gatherings

Preparation Insight:

First, mix white chocolate ganache with heavy cream and mascarpone to make a thick cream. Next, layer this cream with sweet strawberries that have been soaked in sugar and lemon juice. Soak ladyfinger cookies in a matcha green tea mixture for a unique, earthy flavor. You can use store-bought ladyfingers or replace them with pieces of vanilla or lemon pound cake for something different.

Culinary Tip:

Enhance the dessert with sliced strawberries along the sides of your serving glasses and top with additional macerated strawberries for a burst of flavor. Combine the whipped ganache with mascarpone, adding vanilla and a pinch of salt, or opt for rum for a deeper, boozy note.

Make It Your Own:

This dessert is ready in about 35 minutes and is very flexible. Try using other fruits like berries or peaches instead of strawberries. You can also swap mascarpone for cream cheese or crème fraîche for a slightly tangy taste. Add a splash of rum instead of vanilla for an extra kick.

This recipe is easy to make and perfect for a quick, impressive dessert at any summer party

Ingredients
1 pint heavy cream, divided
⅔ cup white chocolate chips
¾ cup boiling water
2 tablespoons granulated sugar, divided
2 teaspoons + 2 tablespoons culinary-grade matcha green tea powder, divided
1 quart fresh strawberries, divided
Juice of ½ lemon
18 ladyfinger cookies
½ teaspoon kosher salt
1 teaspoon vanilla extract or white rum
⅔ cup mascarpone cheese

Directions for Matcha Strawberry Tiramisu

  1. Start with the Cream:
    • In a small pot, combine ⅔ cup of heavy cream and white chocolate. Whisk them together over low heat until the white chocolate melts.
    • Once melted, pour this mixture into a stand mixer bowl and chill in the refrigerator for at least 15 minutes or until it feels cool.
  2. Prepare the Matcha Mixture:
    • Whisk together boiling water, 1 tablespoon of granulated sugar, and 2 teaspoons of matcha green tea powder in a bowl. Once mixed, set it aside.
  3. Prepare the Strawberries:
    • Take 4 large or 5 small strawberries, remove the stems, and dice them. Mix these with 1 tablespoon of sugar and a splash of lemon juice. Set this mixture aside.
    • Thinly slice another 4 or 5 strawberries to line the tumblers. Keep about 3 strawberries back for the final garnish.
  4. Prepare the Ladyfingers:
    • Cut ladyfingers into small ¾-inch pieces and set them aside.
  5. Whip the Cream:
    • Get the chilled white chocolate mixture from the fridge, add 1 ⅓ cups of heavy cream, a pinch of kosher salt, and either vanilla or rum. Attach the whisk to your mixer and whip everything until it forms soft peaks.
    • Add mascarpone cheese and continue to whip until you get stiff peaks.
  6. Assemble in Glasses:
    • Use a piping bag with a medium round tip to layer some mascarpone cream into the bottom of each glass.
    • Add 4 or 5 pieces of ladyfingers on top of the cream.
    • Generously brush or drizzle the matcha mixture over the ladyfingers.
    • Add another layer of mascarpone cream.
    • Spoon the diced strawberry mixture over the cream.
    • Add a final layer of ladyfingers and again brush with the matcha mixture.
    • Pipe rings of cream on top.
  7. Final Touches:
    • Sift the remaining matcha powder over the cream.
    • Cut the reserved strawberries in half and place one half in the center of each glass.

You can serve the tiramisu immediately or keep it in the refrigerator until it’s time to serve.
