Ingredients:

  1. Eggs – 4

2. Onions – 2

3. Green chillies – 2

4. Ginger – a small piece

5. Curry Leaves – 4-5 leaves

6. Tomatoes – 2

7. Turmeric Powder- ¼ teaspoon

8. Coriander Powder – ½ tablespoon

9. Chilly Powder – ½ tablespoon

10. Black Pepper Powder- ½ teaspoon

11. Garam Masala Powder – 1/2 teaspoon

12. Chilly Flakes – ½ teaspoon

13. Coriander leaves – for garnish

14. Salt – as required

15. Oil – 3 tablespoons

Method:

  • Take a wide frying pan and add oil, chopped onions, ginger, green chilies & curry leaves. Saute till onions become soft and translucent. Then add chopped tomatoes and fry till they become soft.
  • Add salt, Turmeric, coriander & chilly powders, and fry for a few minutes.
  • Add 2-3 tablespoons of water at this stage to the masala and saute well
  • Then take the eggs one by one, break in each egg, and let it fall directly into the masala on four different sides of the pan as it is without beating or stirring.
  • Sprinkle salt, black pepper powder, chili Flakes, garam masala, and coriander leaves on top of the egg yolks and keep the pan closed, for 5 minutes on low flame.
  • After 5 minutes open the pan, and check whether the egg is cooked or not.
  • Masala Egg Poach is now ready to be served.
