To make a tasty roast chicken, start by thoroughly cleaning and washing a whole chicken, then drying it well with a kitchen towel.
For the marinade, mix together salt, olive oil, hot chili flakes or paprika powder, crushed black pepper, mustard sauce or mustard paste, garlic paste (rub some inside the chicken), and lemon juice. Ensure the chicken is evenly coated with this mixture.
Heat a frying pan or small wok over medium heat and add 3-4 tablespoons of olive oil. Place the marinated chicken in the pan along with all the marinade juices. Add a bit of water, cover the pan with a lid, and let it cook for about 30 minutes.
After half an hour, carefully flip the chicken over using tongs or a spatula. Let it simmer until the chicken is tender and fully cooked.
