Crispy Corn Fritters Recipe
This flavorful and delicious recipe is perfect for breakfast, as an appetizer, or even as a main course. I often make these for weekend brunch, serving them with fresh guacamole, or as a quick weeknight dinner alongside a fresh salad. To achieve extra crispiness, be sure to add equal portions of plain and corn flour; otherwise, they may turn out soggy.
Ingredients:
- 1 cup plain flour (or rice flour for a gluten-free option)
- 1 cup corn flour
- ¼ tsp baking soda
- 1 egg
- 2 cups corn kernels
- ½ cup green onions
- ½ cup chopped spinach
- ½ cup grated zucchini
- Salt to taste
- ½ tsp chili flakes
- 1 tsp ginger garlic paste
- Oil for frying
Method:
- In a mixing bowl, combine all the above ingredients by gradually adding some water.
- Ensure that the consistency of the mixture is thick.
- Heat a pan, spray it with oil, and pour the mixture into small circles.
- Allow them to cook for 1-2 minutes on one side and then flip them over.
