Two ways to bake Shortbread Cookie Christmas Trees

Difficulty Level: Easy 

Preparation time: 1 hour

Servings: Up to 7 cookies

Method

– Mix 1 small egg yolk, 8tbsp all-purpose flour (Maida), 6 tbsp grated parmesan cheese, and 50g softened butter

– Shape the dough into a cylindrical shape. Cover with a cling wrap and freeze for 30 mins or up to 3 days.

– Slice dough into 3 equal parts. Gently roll out to 1 cm thickness. 

Option 1:

– Cut out Christmas tree shapes using cookie cutters or a knife.

– Arrange on parchment paper. Bake in a preheated oven at 180C for 20 mins. 

– Cool and decorate with icing (mixed with green food color) and some sprinkles.

Option 2:

– Cut out stars of different sizes using a star-shaped cookie cutter set

– Arrange on parchment paper. Bake in a preheated oven at 180C for 20 mins. 

– Cool and arrange one on top of the other in decreasing size, to look like a Christmas tree.

– Glue the cookies together using some icing in between.

– Decorate with green icing and sprinkles as needed.

Tips: Handle the frozen cookie dough with your hands only as much as needed. The warmth may prevent the cookie from rising well.
