I wanted to make something different one evening for dinner. All I had in the fridge was a big cauliflower.

How do I make it look fancy and bring a fine dining experience at the convenience of my home?  BOOM this recipe popped up in my mind. I remembered seeing this in a menu somewhere so I added my own twist to it.

Great for those vegetarian dinner parties!

Ingredients:

1 medium-sized Cauliflower

½ bunch mint

½ bunch coriander

½ bunch of curry leaves

4 green chilies

2 tsp ginger garlic paste

½ teaspoon turmeric

1 teaspoon pepper

Salt to taste

1 lime

Oil to fry

For plating:

3 tbsp Greek yogurt/hung curd

Pomegranate

Lemon wedges

Chillie oil

Method:

Cut the vertically into thick steaks

Soak them in lukewarm water and give them a wash

Add the herbs, ginger garlic paste, green chilies, pepper, and salt, and make a smooth paste

Pat dry the cauliflower and smear the green paste along with salt & turmeric

Squeeze in the lime juice and let it rest for about 5-10 mins

Heat a pan add 2 tsp of oil and place the cauliflower

Turn it over once it browns

Add ¼ cup of water, put the lid on, and allow it to cook once done

For plate: Smear yogurt on the plate and place the cauliflower drizzle some chili oil, pomegranate
