Bottle Gourd kulfi with oats served with super healthy granola

Bottle gourd kulfi

Ingredients:

1/4 cup oats
1.5-litre full cream milk
300 gm bottle gourd (approx)
300gm milkmaid
200 gm milk cream
1tsp vanilla essence
green food color(optional)

Recipe:
In a pan, boil the milk and add a grated bottle gourd. Cook until the milk reduces and the bottle gourd softens, about 10-15 minutes. Then, add oats and cook for another 5 minutes until thickened. Add milkmaid and green food color to taste. Turn off the heat and let it cool.

In a separate bowl, whip the milk cream until thick.

Blend the mixture of milk, bottle gourd, and oats until smooth. Add the whipped milk cream and a teaspoon of vanilla essence.

Transfer the mixture to a container and freeze. After 2-3 hours, when the ice cream is partially set, remove it and churn once more. Return it to the container for further freezing.

Allow it to set for 5-6 hours or until firm, depending on your fridge settings.

Scoop out the Bottle gourd kulfi, garnish with choco chips or sprinkles, and serve with granola.

To make the Granola bars, warm the peanut butter on low heat and add jaggery until it melts. Next, take roasted oats, almonds, crushed walnuts, cashews, and raisins, and combine them with the warm peanut butter. Mix everything to form a dough. Line a baking sheet with parchment paper, then spread the dough evenly onto the paper. Place it in the refrigerator for 1-2 hours until it sets. Once set, chop the bars into desired sizes. Your homemade granola bars are ready. Enjoy!
